Whether you’re meal prepping for the week or need a quick and satisfying sandwich, this one’s a winner.

Ingredients

Here’s everything you need to make 4 servings of this delicious sandwich:

For the Marinated Chicken:

  • Boneless chicken breast (500g): 550 calories, 100g protein
  • Plain yogurt (¼ cup): 35 calories, 2g protein, 2g carbs
  • Ginger garlic paste (1 tbsp)
  • Tandoori masala (1 tbsp)
  • Turmeric powder (½ tsp)
  • Fenugreek/Methi Leaves (1/2 tsp)
  • Salt to taste

For the Chicken Filling:

  • Cooked shredded chicken (from above)
  • Light mayonnaise (2 tbsp): 70 calories, 2g carbs, 7g fat
  • Finely chopped onion (¼ cup): 15 calories, 0.3g protein, 3g carbs
  • Olive Oil (1 tbsp): 40 calories

For Sandwich Assembly (per sandwich):

  • Whole wheat bread (2 slices): 160 calories, 6g protein, 26g carbs, 3g fiber
  • Mother’s All-in-One Chutney (1 tsp): ~15 calories

Instructions

Step 1: Marinate the Chicken

In a bowl, add the sliced chicken breasts and then add the following:

  • Plain yogurt
  • Ginger garlic paste
  • Tandoori masala
  • Turmeric
  • Methi leave
  • Salt

Marinate for at least 1 hour (or overnight for best flavor).

Step 2: Cook the Chicken

Cook the marinated chicken in a pan or bake at 400°F (200°C) for 20–25 minutes until fully cooked and slightly charred. Let it cool.

Step 3: Shred the Chicken

Transfer the cooked chicken to a food processor and pulse until finely shredded. You want a texture that spreads easily but still has some bite.

Step 4: Mix the Filling

In a bowl, mix the shredded chicken with:

  • Light mayo
  • Chopped onions

Taste and adjust salt or spice, if needed.

Step 5: Assemble the Sandwich

  • Toast the bread slices lightly.
  • On one slice, spread a thin layer of Mother’s All-in-One Chutney.
  • Add a generous layer of the shredded chicken filling.
  • Top with the second slice of bread.
  • Press gently and slice in half.

Optional: Grill the sandwich for an extra toasty bite!
